Ingredients
  

  • 260 g Salmon
  • 2 tsp olive oil
  • salt and pepper

Dressing

  • 1 tbsp capers
  • 1 tbsp Dijon mustard
  • 1 tbsp Apple Cider Vinegar
  • 3 tbsp olive oil
  • 1 tsp coconut aminos
  • salt and pepper

Salad

  • 200 g cucumber diced
  • 55 g sugar snap peas sliced into matchsticks
  • 28 g red bell peppers sliced
  • 28 g olives pitted and halved
  • 14 g sun-dried tomatoes chopped
  • 140 g avocados diced
  • 3 tbsp fresh dill or fresh parsley or fresh basil or fresh chives chopped
  • 1 tbsp pumpkin seeds
  • 1 tbsp sunflower seeds
