Fried Egg Coconut Milk Curry

Ingredients
  

  • 3-4 tbsp Red Palm Oil
  • ½ tsp Cumin Seeds
  • ½ tsp Fennel Seeds
  • ½ tsp Fenugreek Seeds
  • ½ tsp Mustard Seeds
  • 1 Sprig Curry Leaves
  • 1 Onion (Chopped)
  • 1 tbsp Ginger Garlic Paste (3 Garlic & 1 Inch Ginger – Pounded)
  • cup Anchovies
  • 1 Tomato (Sliced)
  • 1 tsp Turmeric Powder
  • Salt (as needed)
  • 1 tsp Coriander Powder
  • ½ tsp Cumin Powder
  • ½ tsp Garam Masala Powder
  • ½ tsp Red Chilli Powder (Coarse Grounded)
  • 4-5 Bird’s Eye Chillies (Slit)
  • 1 Pandan Leaf (Cuts)
  • 200 ml Thick Coconut Milk (1st Extraction)
  • 150 ml Warm Water + 300ml Thin Coconut Milk (2nd Extraction)
  • 5 Fried Eggs
  • Coriander Leaves (Handful)
