Ingredients

  • 50 g unsweetened chocolate chopped
  • 50 ml coconut cream
  • 50 g unsweetened peanut butter
  • 45 ml sugar-free maple syrup
  • 30 g flaxseed powder
  • 30 g coconut flour
  • 30 g desiccated coconut
  • 20 g pumpkin seed
  • 15 g unsweetened cranberry
  • 15 g sugar-free chocolate chips
  • Salt flakes optional

Instructions

  • In a medium size microwave safe mixing bowl, add in chocolates and coconut cream. Melt the chocolate in microwave. We have used 600W for about a minute. Let the chocolate continue to sit in the coconut milk for a minute so that the heat will melt down the chocolates.
  • Add in all other ingredients except the salt flakes if used. Remember to save some pumpkin seeds and cranberries to sprinkle at the top.
  • Mix everything. Then pour the mixture into a 7"x7" tin. Press everything down firmly.
  • Sprinkle the pumpkin seeds and cranberries saved earlier on top and the salt flakes, press them all down.
  • Refrigerate it for at least an hour.
  • Cut into pieces and enjoy.
