KETO MCGRIDDLES
McGriddles is a very popular breakfast sandwich sold by McDonald's which featured special pancake-inspired buns (known as McGriddles cakes) and comes with meat, eggs, and cheese, though there are many varieties that have come up over the years and today, it is known as Sausage McMuffins. This keto version is based on my sheet pan pancake recipe and the short cut method was inspired by Ketozonie (thank you !). It is easy to make, delicious and guilt-free.

DRY INGREDIENTS FOR GRIDDLE CAKES
other flour option
- 480 g almond flour
- 120 g coconut flour (The amount of pea or almond milk should be 240 ml / 1 cup. All other ingredients remains the same)
- 60 g monkfruit
- 24 g baking powder (OR any other Keto friendly sweetener)
- 1 tsp salt
WET INGREDIENTS FOR GRIDDLE CAKES
- 8 large whole eggs
- 120 ml unsalted melted water
- 120 ml Unsweetened Pea or Almond Milk
- 2 tsp maple extract
SAUSAGE PATTY LAYER
- 1000 g ground pork
- salt and pepper to taste
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1/2 tbsp cumin ground
- 1 tbsp Cayenne Pepper
- 1 tbsp Paprika Powder
- 2 whole egg
DIRECTIONS FOR GRIDDLE CAKES (SHORT CUT METHOD)
Preheat the oven at 350F or 180C.
In a bowl, add all the dry ingredients and mix until well combined.
Add all the wet ingredients and whisk until well combined. The batter is thick and smooth.
Transfer the batter equally into 2 x 10x8 inch or 25x20 cm sheet pans lined with parchment paper.
Spread evenly and tap a few times.
Bake at the middle rack for 15 minutes or until a wooden skewer comes out clean.
After baking, set aside and let them cool.
DIRECTONS FOR EGG LAYER
Add all ingredients into a bowl and whisk until well combined.
Pour into the same size sheet pan lined with parchment paper.

Bake at 350F or 180C for 15 to 20 minutes or until cooked and browned.
After baking, drain excess oil, pat dry and let it cool for a bit.
ASSEMBLY FOR SHORT CUT METHOD
Place one layer of griddle cake bun at the bottom. Brush with sugar free maple syrup (optional).
Top with egg layer.
Top with sausage patty layer.
Top with another layer of griddle cake.
Cut into 12 or 16 servings (In the video, I cut into 12 servings).6. To freeze, wrap each serving with cling wrap and aluminum foil.

To reheat, use oven toaster or grill in a pan.
Before eating, you can add a layer of cheese and sriracha or ketchup (sugar free).
REGULAR METHOD
Heat up a flat griddle or non-stick flat pan.

Brush egg rings with melted butter too.
Spoon batter into the rings and cook for a while.
Remove the rings, flip the buns over and cook for a while.
Remove buns and set aside.
Brush the pan and rings again with melted butter.
Crack an egg into each ring and cook for a while.
Remove rings, flip over and cook the eggs for a while.
Remove eggs and set aside.
Place 100 g of seasoned ground pork into each ring to make a similar round shape.
Pan fry the sausage patty until cooked and browned on each side.
To assemble, place one griddle cake at the bottom with a slice of cheese. Then top with egg, sausage patty and another layer of griddle cake.
