Keto Eggless Scones
These high protein scones are keto friendly, gluten free and very simple to make. I would describe the texture as a blend between cake and bread which makes it resembles scones decently well. Lupin flour by nature carries slight bitterness in taste. However, its taste is pretty mild in these scones. By pairing them with salted butter, sour cream, cream cheese and/or jams, the scones taste so good that you hardly notice the taste from lupin. The recipe only creates a small batch of scones. You can enjoy a healthy version of scone anytime even when there are not many members in the house.

Some information on lupin
This yellow bean is the seed of the lupin flowering plant. It is part of the traditional Mediterranean diet for centuries. Lupin is a great source of protein and fiber - 3x more protein than quinoa and 3x more fiber than oats. It's also loaded with potassium and iron. Totally keto with super low net carb and it's another great flour to consider into keto bakes.
