Keto Coconut Flour Eggless Fried Pumpkin Balls

This delicious quick snack recipe is low carb, eggless and gluten free. Its texture is chewy and it is almost easy to go with any toppings you love. They taste best when they are still warm. You could use any spices like keto friendly sweetener, cinnamon spices and pumpkin spices. Perhaps make them a savoury snack by coating them with a mixture of parmesan, garlic and onion powder. Ingredients
  

  • 6 g gelatin powder add in 60 ml/4 tsp water
  • 40 g coconut flour
  • 15 g allulose sweetener
  • 10 g psyllium husk
  • 2 g salt
  • 100 g pumpkin puree
  • 60 ml hot water
  • Coating optional
  • If you like to add on sweetness, these are some good ideas we like. Coat the pumpkin balls while they are still warm.

Instructions
 

  • Dissolve the gelatin powder in Microwave at half power 600W for 40-60sec.
  • In a mixing bowl, mix all dry ingredients together.
  • Add in pumpkin puree and mix everything.
  • Add in hot water and gelatin mixture.
  • Knead the batter to become dough.
  • Split the dough into 12 even size pumpkin balls and roll it to round shape.
  • Deep fry the pumpkin balls in cooking oil.
