Ingredients
  

  • 1 tbsp olive oil
  • 80 g red onions, diced
  • 2 garlic cloves, crushed
  • 450 g ground beef
  • 50 g red bell peppers, diced
  • 50 g green bell peppers, diced
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 2 tsp tomato paste
  • 250 g crushed tomatoes
  • 110 g shredded cheddar cheese
  • salt
  • pepper

For serving

  • 120 ml sour cream
  • 2 tsp fresh cilantro, chopped

Instructions
 

  • Preheat the oven to 350° F (180° C).
  • Fry the onion and garlic until soft, add the ground beef, and cook until all the meat has browned.
  • Add the peppers, stir, and cook until soft
  • Add the cumin, chili powder, tomato paste, tomatoes, salt, and pepper, and stir well.
  • Place contents from the pan into a baking dish.
  • Sprinkle the shredded cheese over evenly and cook in the oven for 20 minutes.
  • Garnish individual servings with sour cream and a sprinkle of cilantro.

Notes

To reduce dishes, you can also cook the beef and vegetables in an oven-safe skillet. When the beef is browned, simply top with cheese and place into the oven.
Using both red and green peppers adds flavor, but if you prefer, you can just use one or the other.
