Who doesn’t love cookie dough? Paleo friendly, with all-natural sweeteners, these are cookie dough truffles you can feel good about eating.

Paleo Cookie Dough Truffles (Balanced Diet)

To toast the paleo flour: Preheat the oven to 350°F. Sprinkle the paleo flour onto a baking sheet in an even layer, and toast in the preheated oven for 4 minutes.
Remove the baking sheet from the oven and stir the flour around with a fork to aerate it. Then, return the sheet pan to the oven and toast for another 4 minutes. Set aside to cool.Cookie dough truffles will keep in an airtight container in the fridge for up to 1 week. It’s important they stay chilled until ready to eat, otherwise the chocolate will soften. You can also keep them in the freezer for frozen cookie dough bites! YUM.

  • 1/8 cups kosher salt
  • 1 cups coconut oil melted
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cups enjoy life semi-sweet mini chocolate chips (optional)
